* 1 pound box of shell pasta
* 1 1/2 – 2 pounds of chicken (boneless and skinless breasts)
* 1 14 oz. bag of broccoli florets
* 1 15 oz. jar of Alfredo sauce
* 6 ounces shredded cheddar cheese
* salt, pepper, and olive oil for roasting chicken
* lemon pepper
Preheat your oven to 350 F. Rinse and pat dry your chicken breasts and then season them well on both sides with the salt and pepper. Drizzle the olive oil in your baking dish and put the chicken in. Roast your breasts in the oven for 30-35 minutes or until it is don’t inside. Let the chicken cool until you can safely handle it, then chop it up and set it aside.
Bring a large pot of salted water to a boil and add in your shell pasta, stir a few times to ensure that it doesn’t stick together. When it’s finished cooking, drain and set aside.
Steam your broccoli in the microwave for about 4 minutes, they don’t have to be completely cooked through.
In a large bowl, combine the pasta, cooked chicken, cheese, broccoli, and Alfredo sauce, then season well with lemon pepper. Spray a 13x 9 inch baking pan with nonstick spray and pour the pasta mixture into the pan. Sprinkle with the some more grated cheddar cheese, and cover loosely with foil. Bake for 25 minutes, then bake an additional 5 minutes under the broiler to get that desired golden, bubbly cheese.
Remove from oven and enjoy! 🙂
(A very toddler and husband friendly meal 😉
