I’m So Excited For This Weekend!

I cannot wait for this weekend! I love Easter, I’m a Christian so Easter to me is very special. I love celebrating that my Savior has risen and lives and the joy, peace, and hope that brings to me daily. Not only do I love Easter for my religious views, but Easter is so fun, and I have so many special childhood memories of my brother and I on Easter morning. I’ll always remember hunting for eggs and our Easter baskets in the dewey Oregon Spring mornings with him. My mom would always hide our baskets outside too (weather permitting) and I love that, it’s a tradition I plan on doing with my own daughter as well. Paisley is just about to turn two and she’s at such a fun age! Last year was special too, but I cannot wait to watch her hunt for her eggs and to see the delight on her face šŸ™‚ We’re also dying eggs this weekend with Daddy, so that will be fun!
I’m making a lovely roast beef dinner for Sunday. Hubby isn’t a big fan of ham, so I have to get a little creative and go the non traditional route. On the menu:
– My Favorite Pot Roast (recipe on here)
– Mashed Potatoes
– Homemade Rolls (I’ll be documenting the process with this new recipe and will post it)
– Garden Salad
– The Best Carrot Cake with Cream Cheese Frosting (I’ll document this and post this recipe as well)

It’s going to be delicious, so stay tuned! I’ve already put together Paisley’s Easter basket and filled most of the eggs! I would say I’m just slightly eager for this Sunday!

My Food Philosophy…

I would call myself a pretty traditional wife, mother, and woman. Part of my “old school” mentality is that I believe in making as many things homemade as possible, especially when it comes to what we eat. I try and avoid processed, frozen, and canned items as much as I can, and instead buy fresh fruits, veggies and lean meats to prepare into meals. Not only is this a much healthier option, but I also get more bang for my buck. I choose to feed my family this way because I know exactly what is going into our meals and that we are not eating things laden with preservatives and chemicals. I guess you could say I’m a bit of a “crunchy mama” and try and go a more natural route with cooking. In this day and age, the world is so filled with technology, and everything at the press of a button… I don’t believe our food should be this way too.
